We would like to swipe the card for the tasting fees and any by-the glass purchases in advance…sort of like “opening a tab”. We are expanding our outside area and we don’t want to miss out on sales. We have had a few people sneak out after tasting when we are helping other customers.

I think the only way to do this would be to add the customers name and then swipe their credit card and save it. You can then put the order on hold and resume it when you are ready.
We hold onto cc cards when someone is opening a tab, just like you would at a bar.

That’s exactly what I was going to say. If they aren’t already a member with a card on file then I save the credit card in their account linked to the order. I tell them we need a card on file in order to start a tab.
