Swiping vs Chip Credit Card Payments - Disputes from Customers

HI everyone. We have recently come across a scenario where we have had a customer come in and purchase wine, but then have disputed with their credit card company. We did a manual entry for this particular card, so the client information comes up as “Guest, Customer”. In discussion with our provider, they are saying that if there is no chip used (ie. no pin was entered), anyone can dispute.

I know several BC wineries are using the system of swiping credit cards (or using the camera), where there is no pin entered. Are we putting ourselves at risk with this practise, as we are not getting signatures? Are we all in the same boat? How are other wineries handling this?
