Just wondering if someone can point me in the right direction - i’ve come across this resource which outlines how to add a category, except for the fact that “categories” are un tickable per product, am I doing something wrong, or does this feature need to be activated elsewhere?

I read that link and it sounds right. My guess is that you’re not creating the page in the right spot in Content Editor. You create the page in the SHOP section (which may be under a different name as outlined in the link). After you create a child page in the shop section, you can click the link to that page to view it. It will have no wines yet. Keep it open.
Now, open a product and go to the ‘categories’ section, and you should see your newly created page there. Just check the box, save, and then refresh that page and you will see your wine on there now.
It is kind of confusing at first because while creating products you are already tellling it things like what varietal it is, what color wine it is, what region, etc. but those do not create category pages or any landing page at all. Example, if you have 12 Cabernet Sauvignons, and you’ve given that varietal to each wine, you might find that you still have to create a “Cabernet Sauvignon” page under SHOP, and then categorize those wines under that page.
